As we say goodbye to National Nutrition Month, the College of ACES would like to introduce you to alumna Dawn Jackson Blatner. She graduated with a Bachelor of Science in Dietetics & Nutrition from the Food Science and Human Nutrition department in 1997. 

Zeynep Madak-Erdogan named associate dean in the Graduate College

Zeynep Madak-Erdogan, associate professor of Food Science and Human Nutrition and Sylvia D. Stroup Scholar of Cancer and Nutrition, has been named associate dean in the Graduate College at the University of Illinois. Her research and career focus on improving the quality of life and outcomes for cancer patients.

Pop-up restaurant is capstone project for hospitality management major

I am a senior at the University of Illinois Urbana-Champaign with a major in hospitality management and a minor in business. I chose hospitality management because I love to cook, and I have had unforgettable experiences that have left a memorable impact on me. Throughout my time here at the university, I developed a deeper understanding of what it means to work in the hospitality industry, specifically in a restaurant setting.

National Nutrition Month - Alumna Feature - Jenny Westerkamp

In honor of National Nutrition Month, the College of ACES proudly spotlights alum Jenny Westerkamp. She graduated with a Bachelor of Science in Dietetics & Nutrition from the Food Science and Human Nutrition department in 2008. She worked in professional sports for 13 years, including serving as the Team Nutritionist for the Chicago Bulls from 2017-2022. Now, she is a playmaker in business, serving as CEO of All Access Dietetics and assisting the next generation of dietitians.

Running a homemade ice cream business keeps FSHN major busy

My name is Jenna Spangler, and I’m the owner of Jenna Lou’s Homemade Ice Cream! In June 2019, I needed to raise $150 to go on a mission trip. My solution? Make and sell ice cream - because everyone loves homemade ice cream. I sold it through social media and one after another, friends and family placed their orders. The first eleven people ordered 30 pints altogether, and I hit my $150 goal. Then sales kept coming, all the way to 126 ice cream pints. As it turned out, I loved making ice cream, and I had a community to support it. So I decided to keep going with this new hobby!

Studies discuss how to get the benefits of fiber without side effects

URBANA, Ill. – Fiber-rich food is important for gastrointestinal health, but most Americans don’t get enough in their typical diet. While fiber supplements can help, they can also cause unpleasant side effects such as excessive bloating and gas.

Two new papers from the University of Illinois make it easier for food manufacturers to amplify fiber in foods and beverages for health benefit without digestive discomfort.

Meet ACES alum Susannah Scaroni, wheelchair racing champion

ACES alum Susannah Scaroni is a record-setting athlete. Her many accomplishments as a wheelchair racer include gold and bronze medals at the Tokyo Paralympics in 2021, a 5,000 meter world record in para-track, and record time in the New York Marathon, Women’s Wheelchair Division, where she bested the time of teammate Tatyana McFadden, also an ACES alum.

CHAMPAIGN, Ill. — A new study explored whether adherence to American Academy of Pediatrics guidelines for diet and physical activity had any relationship with toddlers’ ability to remember, plan, pay attention, shift between tasks and regulate their own thoughts and behavior, a suite of skills known as executive function.
